Nita’s Famous Goulash is super easy to make. It only takes a few ingredients and 2 pans. You could use one pan and boil your macaroni first and set it aside. Then cook the other ingredients as directed in the recipe.

To get started you will need a few ingredients.
You will need:
- 1 pound elbow macaroni, less or more depending on the size of your family.
- 1 pounds ground beef, less or more depending on the size of your family.
- 1 onion finely chopped
- 1 clove garlic minced
- 1 15 oz can tomato sauce
- 1 14.5 oz can petit diced tomatoes
- 1 14.5 oz can sweet corn (or frozen)
- 1 teaspoons salt
- 1/2 teaspoon black pepper
- 1 cup cheddar cheese shredded
I like elbow macaroni but you could use noodles, shell pasta, or spaghetti. Pick the pasta your family likes. I cook the full recipe and freeze what I don’t use for a quick meal at a later date.
Instructions
Bring a large pot of water to boil. Cook macaroni until macaroni is tender, then drain. I put a wooden spoon across the pot to keep it from boiling over. I use the same spoon to stir the macaroni occasionally.
Spray pan with non-stick spray if needed. Heat a large skillet over high heat.
Add ground beef and onions to the pan. Break beef apart, and cook for 6-7 minutes until browned. Drain any fat. Then mix in garlic and cook until fragrant, about 1 minute.
Add in tomato sauce, diced tomatoes and corn. Mix until combined. Simmer for a few minutes.
Stir in salt, and pepper. Taste and adjust the seasonings. Simmer for 5 to 10 minutes.
Mix in cooked macaroni and simmer for 1 to2 minutes.
You can add cheddar cheese to the mix or sprinkle on top when served.

Ingredients
- 1 lb. elbow macaroni
- 1 lb. ground beef
- 1 onion finely chopped

- 1 can can tomato sauce
- 1 can petit diced tomatoes
- 1 can sweet corn (or frozen)
- 1/2 tsp black pepper [you can eyeball it]
- 1/2 tsp salt [you can eyeball it]
- 1 cup cheddar cheese shredded [I use prepackaged]
Instructions
- Bring a large pot of water to boil. Cook macaroni for 3 minutes less than the box directions, then drain.
- Heat a large skillet over high heat. Add ground beef and onions to the pan. Break beef apart, cooking for 6-7 minutes until browned. Drain any fat.
- Mix in garlic and cook until fragrant, about 1 minute.
- Add in tomato sauce, diced tomatoes and corn. Mix until combined.
- Heat until veggies are warm.
- Stir in salt, and pepper. Taste and adjust the seasonings.
- Mix in cooked macaroni and simmer for 5 to10 minutes.
- You can add cheddar cheese to the mix or sprinkle on top when served
